Breakfast Tacos

Ingredients

1 egg

2 whole-wheat, low-carb tortillas

1 oz. of low-fat Mozzarella cheese

1-2 tsp olive oil

2-3 Tbsp red pepper, diced

2-3 Tbsp red or white onion

2-3 Tbsp salsa

black pepper, to taste



Instructions

ONE: Heat olive oil is a small skillet. Add egg, peppers, and onions, and black pepper. Cook for 2-3 minutes, stirring frequently.

TWO: Divide the mixture between the two tortillas and top with cheese and salsa.


Add cilantro and avocado, if desired
