1 cup frozen berries (blueberries, raspberries, etc.)
1 to 2 loosely-packed cups of spinach
2 cups coconut milk
1 tablespoon coconut oil
2 heaping tablespoons plant-based protein powder(UltraClear Renew)
Directions: Blend until smooth.


Keepin’ It Smooth
1 avocado
5 ounces frozen peaches
1 handful of raspberries
1 handful of hemp seeds
unsweetened almond milk
2 dates
2 heaping tablespoons plant-based protein powder
optional: 1 tablespoon ground flax seed
Directions: Blend and Enjoy!


Favorite Green Shake
3 cups spinach
1 cup frozen blueberries (or raspberries, blackberries, mangoes, papaya, etc.)
1 tablespoon flax oil
1 tablespoon maca powder
1 tablespoon spirulina
1 cup almond milk
2 heaping tablespoons plant-based protein powder(UltraClear Renew)
2 dates or a few drops of stevia to taste

Morning Mocha

½ cup coconut meat (either from a young Thai coconut or organic shredded dried coconut flakes and an additional ½ cup water)

1 teaspoon vanilla extract
pinch of sea salt
2 heaping tablespoons plant-based protein powder

John R’s Favorite Shake
Warm tea (i.e. pau d’arco, gynostemma) as base
2 tablespoons coconut oil

Cinnamon Rolls For Breakfast
½ cup almonds and 1 cup water OR 1 cup almond milk (unsweetened)
1 cup coconut water
1 teaspoon cinnamon
1 pinch sea salt
2 teaspoons vanilla extract or powder
3 pitted dates
1 tablespoon pecans
stevia to taste
2 heaping tablespoons plant-based protein powder(UltraClear Renew)

Sweet Protein Shake
1 cup nuts (pecans, walnuts, or almonds)
Your choice of rice/almond/hemp seed milk (just enough to cover nuts in the base of the blender)
5-10 drops stevia extract (to taste)
1 teaspoon vanilla extract
2-3 cups frozen fruit (blueberries, raspberries, blackberries, mangoes, papaya, peaches)
1 apple
1 ripe pear
water OR brewed and cooled herbal tea (like ginger, raspberry, lemon, rooibos, green, yerba mate, etc.) OR coconut water (just enough to blend to desired consistency)

Cashew Cream Smoothie

Mango Cardamom Blast
2 ripe mangoes, peeled and cut into pieces
1 cup coconut water
2 tablespoons dried and shredded coconut flakes

handful of ice cubes (optional)
garnish with lime zest and freshly ground black pepper

Berry Protein Shake
1 cup nut/rice/hempseed milk of your choice (either homemade with ½ cup nuts and 1½-2 cups water, or unsweetened from the health food store)

3 pitted dates

Albert’s Favorite Shake

Detoxifying Dandelion Shake
3 cups dandelion greens
2 cups coconut water
1 mango, peeled and cubed
1 peach (fresh) OR 1 cup frozen peaches
2 heaping tablespoons plant-based protein powder (ideally vanilla flavor)
optional: 1 tablespoon ground flax seed
Directions: Blend until smooth.


The Grasshopper Shake
1½ cups warm peppermint tea
1 heaping tablespoon cacao powder (You can use carob or unsweetened Dutch chocolate powder instead of cacao if you want)
1 tablespoon melted coconut oil

2 teaspoons spirulina (you can use chlorella or any green powder)
¼ teaspoon stevia
pinch of sea salt
Optional:
2 heaping tablespoons plant-based protein powder (ideally chocolate flavor)

Directions: Pour the warm tea into a blender. Add cacao powder, cashews, spirulina, salt and stevia and blend for 45 seconds or until cashews are broken down. While blending, drizzle in the melted coconut oil. Serve in a mug for a nourishing and warm drink.


Robert’s Favorite Shake
1 tablespoon spirulina
frozen blueberries
lacinato kale (washed, stems removed)
unsweetened almond milk or hemp milk (enough to make it “pour-able”)
1 tablespoon almond butter (optional)
2 heaping tablespoons plant-based protein powder (ideally chocolate flavor)

Directions: Blend until smooth.

Purple Haze Smoothie
6 ounces blackberries
2 cups of pineapple (fresh or frozen)
water (just enough to blend- it’s best thick and creamy)
2 heaping tablespoons plant-based protein powder

Directions: Put all ingredients in the blender and mix until smooth


Patricia’s Favorite Shake
coconut water
1 cup fresh (or frozen) berries
1 tablespoon unsweetened SunButter

1 large handful of frozen blueberries

Almond Butter And Jelly Shake
1 to 1½ cups almond milk

Becky’s Morning Shake
8 ounces of water
3-4 ounces of nut or hemp seed or rice milk (unsweetened)
½ of an avocado
2 teaspoons organic almond butter
a pinch of sea salt
2 heaping tablespoons plant-based protein powder
optional: 1 tablespoon ground flax seed
optional: sweetener to taste (stevia)
optional: 1 tablespoon carob or raw cacao powder
Directions: Blend until smooth and creamy.

Peaches And Cream Shake
1 cup frozen peaches
2 cups whole fat coconut milk
2 teaspoon pumpkin pie spice (most health food stores have this in bulk, but you can also use a mix of cinnamon, nutmeg and allspice)
1 teaspoon freshly grated ginger
2 heaping tablespoons plant-based protein powder (ideally vanilla flavor)
optional: 1 tablespoon ground flax seed
optional: Top with a few sprinkles of toasted (or raw) coconut for extra crunchy treat.
Directions: Blend until smooth and creamy.

John H’s Favorite Shake
½ cup frozen blueberries
2 dashes cinnamon
1 tablespoon almond butter
8 ounces of water
2 heaping tablespoons plant-based protein powder (ideally chocolate flavor)

Sexy Cilantro Shake
1 cup rice/nut/seed milk
1 cup coconut water
1 cup papaya (fresh), peeled and diced
1 cup fresh cilantro leaves
½ cup fresh or frozen mango or peaches
3 dates OR stevia to taste
Directions: Blend all ingredients together until smooth. It’s been shown that cilantro is incredibly detoxifying and can help pull metals from the body, so drink up, especially if you live in a city, have mercury fillings, or drink tap water!

Peach Apple Cobbler
¼ cup pecans (whole or crushed)
1 cup coconut water
2 apples (any variety), cored and sliced into chunks (if organic, leave the peel on for added fiber and nutrients)
1 cup frozen or fresh peaches
1 tablespoon fresh lemon juice
2 teaspoons vanilla powder or extract
1 teaspoon cinnamon
½ teaspoon ginger powder
Pinch of sea salt
Directions: Blend all ingredients together until creamy and enjoy!

GREEN SMOOTHY

Ingredients

  • 1/2 apple
  • 1/2 pear
  • 1/2 tsp freshly grated ginger
  • 2 Tbs flax seeds
  • 6 large kale leaves (take out woody stems), or 2 handfuls of spinach
  • juice of 1 small lemon
  • 1 cup water

Instructions

  1. Quarter apple and pear, remove stems and seeds and put in blender.
  2. Add remaining ingredients to blender and puree. Add more water if needed.
Add fresh fruit, cucumbers, slivered almonds, coconut, fresh herbs or different dark leafy greens for tasty variations on this recipe.

CREAMY DETOX SOUP

Gluten free creamy detox soup made with coconut milk is vegan and dairy free delicious


Ingredients: 

1 tablespoon olive oil or organic coconut oil 
2 cloves of garlic, chopped 
1/4 cup diced sweet onion 
1 inch of fresh ginger, peeled and chopped 
3 cups fresh broccoli, rough cut 
3 cups of stemmed greens, packed (spinach, kale)
Fresh water, as needed 
Sea salt and ground pepper, to taste 
2 tablespoons each: chopped fresh parsley, cilantro, and mint
1 cup light coconut milk, or more, to taste

Instructions:
Heat the olive oil in a large soup pot set over medium heat and stir in the garlic, onion, and ginger (this seasons the oil). 
Add in the broccoli and greens. Add just enough water to cover the vegetables- not too much. You can always thin the soup later, if you need to. 
Bring to a high simmer. Cover the pot, and reduce the heat to a medium simmer. Cook until the broccoli and greens are tender- maybe 15 minutes or so.
Add the chopped parsley, cilantro and mint. Season with sea salt and fresh pepper, to taste.  
Remove the pot from the heat. Use an immersion blender to puree the soup. 
Return the pot to the stove and add in the coconut milk. Stir and heat through gently (don't boil the pureed soup). 
Taste test and adjust seasonings. 
Serve with a sprinkle of fresh herbs.
Serves 4.

Lentil Veggie Soup



Lentil Veggie Soup in the Crock Pot


Ingredients
  • 28 oz. diced organic tomatoes with their juices
  • 6 oz. organic tomato paste
  • 2 cups organic vegetable broth (you can add more if you like it soupier)
  • 3 teaspoons organic coconut sugar
  • 1 tablespoon organic Worcestershire sauce (find it here) Make sure it's organic...if it's not, it contains yucky chemical stuff!
  • 1 teaspoon organic dried parsley
  • 1 teaspoon organic dried basil
  • 1/4 teaspoon sea salt
  • 2 cloves of organic garlic, minced
  • 1/2 cup organic dried lentils, rinsed
  • 6 organic red skin potatoes, cut into bite-sized pieces (quartered)
  • 2 organic carrots, sliced
  • 3 organic celery ribs, chopped
  • 1 cup organic corn
Instructions
  1. Combine all ingredients in a 3-qt. slow cooker
  2. Cover and cook on low for 8 hours or until all veggies are tender.
Notes
One of our favorite ways to enjoy this soup is by dunking a piece of organic whole grain sourdough bread into it.

Traditional Foods 101: Bone Broth, Broth & Stocks



 

Bone broths are given special emphasis among traditional foods circles.  Preindustrial societies across the globe have always placed particular and special emphasis on the preparation of the whole animal – and that includes emphasis on using bones for making broth.  African tribes placed emphasis on bone broths for babies and small children.  In Asia, emphasis is placed on stocks and broths made from fish and fish bones.  In Europe, stocks and broths have become the foundation of cooking and are used in not only making soups and stews, but also for preparing reductions, sauces and for braising vegetables and meats.

In traditional foods circles you’ll hear a lot about broth, stock and bone broth – and they’re typically used interchangeably.  Bone broth, broth and stock are built on the same basic foundation: water, meat or bones (or both), vegetables and seasonings.  As it cooks, the liquid is typically skimmed (although this is not necessary since the scum that rises to the top of the stock pot – off-putting as it is – is a rich source of amino acids) and eventually the solids are removed by straining the stock with a fine-mesh sieve or reusable coffee filter.
  • Broth is typically made with meat and can contain a small amount of bones (think of the bones in a fresh whole chicken).  Broth is typically simmered for a short period of time (45 minutes to 2 hours). It is very light in flavor, thin in texture and rich in protein.
  • Stock is typically made with bones and can contain a small amount of meat (think of the meat that adheres to a beef neck bone).  Often the bones are roasted before simmering them as this simple technique greatly improves the flavor.  Beef stocks, for example, can present a faint acrid flavor if the bones aren’t first roasted.  Stock is typically simmered for a moderate amount of time (3 to 4 hours).  Stock is rich in minerals and gelatin.
  • Bone Broth is typically made with bones and can contain a small amount of meat adhering to the bones. As with stock, bones are typically roasted first to improve the flavor of the bone broth. Bone broths are typically simmered for a very long period of time (often in excess of 24 hours).  This long cooking time helps to remove as many minerals and nutrients as possible from the bones.  At the end of cooking, so many minerals have leached from the bones and into the broth that the bones crumble when pressed lightly between your thumb and forefinger.

Bone broths are extraordinarily rich in nutrients – particularly minerals and amino acids.  Bone broths are a good source of amino acids – particularly arginine, glycine and proline.  Glycine supports the bodies detoxification process and is used in the synthesis of hemoglobin, bile salts and other naturally-occurring chemicals within the body.  Glycine also supports digestion and the secretion of gastric acids.  Proline, especially when paired with vitamin C, supports good skin health.  Bone broths are also rich in gelatin which improves collagen status, thus supporting skin health.  Gelatin also support digestive health which is why it plays a critical role in the GAPS diet.  And, lastly, if you’ve ever wondering why chicken soup is good for a cold, there’s science behind that, too.  Chicken stock inhibits neutrophil migration; that is, it helps mitigate the side effects of colds, flus and upper respiratory infections.  Pretty cool, huh?

My husband and I aim to consume about one quart of bone broth per day, per person.  While we start every morning with a mug of broth seasoned with salt, pepper and crushed garlic, we also use bone broth to braise meats and vegetables as well as in soups, sauces and stews.

How to Store Bone Broth

Bone broth can be stored in the refrigerator for no more than a week.  You can also freeze it in ice cube trays, and transfer the frozen cubes of broth to a resealable freezer bag where they will keep for 6 months.  Alternatively, consider making Homemade Bouillon.

Typically, all you need to prepare bone broth in your kitchen is a good stock pot or a 6-quart slow cooker and something for straining the broth.  To prepare a very clear broth, I recommend straining with a very fine-mesh sieve or a reusable coffee filter (using both in conjunction yields the finest results).

Delicious Summer Drink Recipes







  • 1 medium cucumber, cleaned and cut into ½ inch slices
  • 2 quarts of pure water
Combine cucumber and water in a large pitcher and allow to sit for one hour or longer. Serve cool.

Agua Fresca

This popular Mexican drink infuses water with your favorite fresh fruit.
  • 4 cups pure, cold water
  • 2 cups of your favorite fresh fruit (I like berries or papaya)
  • Stevia to taste
  • 2 teaspoons of fresh squeezed lime juice
  • Lime wedges
Aqua Fresca
  1. Place fruit and water in a blender and puree.
  2. Place a small sieve over a pitcher and pour mixture into it, straining the liquid into the pitcher. Discard solids.
  3. Add lime juice and stevia.
  4. Garnish with lime wedges.

Iced Rooibos Mint Tea

Rooibos tea is high in antioxidants and flavonoids, so it promotes youthfulness and great skin. Over a little ice with mint and lemon, it’s a refreshing and detoxifying summer beverage.

  • 6 Rooibos tea bags
  • One lemon, sliced
  • Several leaves of fresh mint
  • Stevia to taste
  • 1 gallon of boiling water
Pour water over lemon, teabags and mint leaves and steep, stirring occasionally, until liquid cools. Remove tea bags, pour into a pitcher, and refrigerate. Serve cool or over a little bit of ice.

Basil Lemonade

Basil Lemonade
 Lemons are high in vitamin C and promote alkalinity and cleansing in the body. The basil adds a refreshing flavor to this sugar-free lemonade.
  • ½ cup of freshly squeezed lemon juice
  • 4 cups of cold water
  • 1 cup of fresh basil leaves
  • Stevia to taste
Place basil in the bottom of a pitcher and muddle it by slightly crushing the leaves. Combine lemon juice and water and pour over basil leaves. Add stevia to taste. Chill, and serve over ice.

Cilantro and Jalapeno Limeade

Cilantro is loaded with antioxidants and aids in detoxification, while jalapeno can help rev up your metabolism. Lime is high in Vitamin C.
Cilantro and Jalapeno Limeade
  • 4-1/2 cups of water
  • 1 cup organic cilantro, washed and chopped
  • 2 large jalapenos, seeds and ribs removed and chopped
  • 1-1/2 cups of fresh lime juice
  • Stevia to taste
  • Lime slices for garnish
Pour water over cilantro and jalapenos. Steep for 30 minutes at room temperature, and then cover and chill for 3-4 hours. Strain the mixture into a pitcher and stir in lime juice. Add stevia to taste. Serve over ice garnished with lime slices.

Summer Hydration Tips

Staying hydrated is essential, especially in the summer. Water helps flush toxins out of your body. Your best bet is to drink pure water at room temperature, especially after periods of activity. Other tips:
  • Avoid electrolyte replacement beverages, soft drinks, and other sugary drinks filled with chemicals. Just avoid them all.
  • When you are active, be sure to take plenty of pure water with you.
  • Drink mostly water, and have special drinks like those listed above occasionally when you feel that you need something with some flavor. Coconut water is also a good option.
  • How can you tell if you are dehydrated? Along with thirst, urine color may be a good indicator you need more water. If your pee is amber colored, you get thy water glass to thine lips!
  • Alcoholic, sugary, and caffeinated beverages dehydrate you, which is another reason water is best.

Chickpea-less Hummus

  • 2 organic zucchinis, chopped
  • ¾ cup tahini (raw if you can find it)
  • 2 Tbs. nutritional yeast
  • ½ cup fresh lemon juice
  •  2 medium or 3 small garlic cloves, minced
  • High quality sea salt, to tasteBlend all ingredients in the blender together until smooth.
Dip celery, carrots red peppers, and cucumbers for a great snack or appetizer- or toss some into salad as a a dressing!

Mushroom Arugula Salad Recipe

Salad Ingredients:
  • 8oz mushrooms
  • 1 bunch basil
  • 1T nutritional yeast
Dressing:
  • 1T low-sodium tamari
  • About 1.5 T lemon juice
  • .5 T raw coconut nectar
  • Sprinkle of cayenne (or more if you like it hot!)

Cauliflower Energy Soup Recipe

 
(Makes about 4 servings)

  • 1 medium head of cauliflower, with outer green leaves removed and chopped into pieces
  • 3 Tbs. organic, unpasteurized miso paste (if you don’t have this you can just add more of the high quality sea salt at the end, adjusted to your taste)
  • ½ ripe avocado
  • 2 cups filtered water
  • Juice of 1 lemon
  • 2 ½ Tbs. of low sodium tamari
  • ½ tsp. turmeric
  • Chopped parsley, as a garnish
  • 1 tsp. Himalayan Sea Salt
Instructions
  1. Add all ingredients and blend until smooth before serving. If you’d like a thinner texture, try adding a bit more water. Enjoy!
