CALIFORNIA COBB SALAD

INGREDIENTS:
1 bundle Romaine lettuce

½ head purple cabbage, ribbon cut

1 cucumber, peeled and chopped

2 carrots, shredded

2 eggs, hard boiled

1 cup shelled edamame, cooked and cooled

4 ounces cubed turkey

¼ - ½ cup vinaigrette


INSTRUCTIONS:

Toss all ingredients in a large salad bowl. Add vinaigrette of your choice and toss

thoroughly. Enjoy this colorful, protein packed salad!

Makes 4 servings
