Summer Rice Salad



Ingredients

  • Black and/or Brown Rice cooked (I mix both)
  • Chopped yellow pepper
  • chopped baby carrots
  • walnut pieces
  • red wine vinegar
  • sesame oil
  • roasted corn

Instructions

Allow rice to cool. Grill pepper and corn and allow to cool. Mix all ingredients and refrigerate. Serve with a protein or eat alone.
