Summer Rice Salad
Ingredients
Black and/or Brown Rice cooked (I mix both)
Chopped yellow pepper
chopped baby carrots
walnut pieces
red wine vinegar
sesame oil
roasted corn
Instructions
Allow rice to cool. Grill pepper and corn and allow to cool. Mix all ingredients and refrigerate. Serve with a protein or eat alone.
