Asparagus and Red Peppers

12 medium asparagus spears
2 medium red bell peppers
2 cloves garlic
4 tbsp balsamic vinegar
4 tsp extra virgin olive oil
Sea salt/pepper to taste

Directions

Preheat oven to 400 degrees.

Trim ends off asparagus and cut into bite-sized pieces.  Cut red pepper into large cubes. 

Mince garlic.  Combine minced garlic, vinegar, and olive oil.  Toss asparagus and red pepper with garlic mixture.  Season with salt and pepper.

Bake for 15 minutes or until tender-crisp.
