Olive Oil Mayo

INGREDIENTS:

  • 1 egg yolk
  • 1 1/2 tsp fresh lemon juice
  • 1 tsp vinegar (Ones to try: White, white wine or apple cider vinegar.)
  • 1/4 tsp Dijon mustard
  • Sea salt, to taste
  • 1/4 cup extra-virgin olive oil

INSTRUCTIONS:

In a food processor, blend first 5 ingredients. With food processor running, slowly pour in oil. For best results, chill before serving.
